The feed liquor is distributed by the rotor to the heating surface and forms a film of equal thickness. At the edges of the wipers, highly-turbulent swirls are produced. These provide excellent heat transfer and take care of mixing the product which comes into contact with the heating surface. Thus an even and short residence time of the product on the heating surface is ensured.
